Here's a modernt twist of the traditional japanese santoku knife! The knife has the blade profile of a santoku but with an added S-grind. A S-grind is a classic convex grind but with a concave hollow grind added above it. This creates an air pocket between the blade and what your cutting which result in smoother cuts and less food stickning to the blade. Because of this the S-grind is very popular in many high end chef's knives.
The blade on this santoku knife is hand forged from 52100 high carbon steel and the handle is made from masur birch with an Elforyn bolster.
